Strawberry Rhubarb Soup

This dish makes the perfect appetizer or dessert!  It’s easy to make and quick too!  Perfect for the warmer weather and it freezes really well too.

Strawberry Rhubarb Soup

Ingredients

  • 1 lb frozen strawberries
  • 1 lb frozen rhubarb
  • 1 ¼ cup orange juice
  • 1/3 - ½ cup sugar

Instructions

  1. Place strawberries, rhubarb and orange juice in pot
  2. Cover and cook on low for about 10 minutes
  3. Add about 1/3 – ½ cup sugar and mash it all up with a fork
  4. Wait until soup cools and refrigerate/freeze
