Onion Kugel

I’ve tried making potato kugel three times and each time was a disastrous failure.  I decided to leave potato kugel cooking to the pros (aka: my Bubby).  As a replacement I make this onion kugel, which in my opinion weirdly tastes like potato kugel.  It’s easy to make, freezes well and tastes good!

On my last cooking day I bought a bag of Vidalia onions from Costco and tripled this recipe.  I cooked it in 6 round tins and now have a stash in the freezer.

 

Onion Kugel

Materials

  • 4 large sweet Vidalia onions very thinly sliced (I used my food processor)
  • ½ cup oil
  • ½ cup water
  • 1-¼ cup flour
  • 5 eggs
  • 2 tsp baking powder
  • 1-½ tsp salt
  • 1/8 tsp black pepper

Instructions

  • Preheat oven to 350.
  • Mix all the ingredients together very well. Pour into a parchment paper lined 7x11 deep baking pan.
  • Bake uncovered for 1.5 hours, until brown.

Notes

When kugels cool to room temperature, cover with tin foil, label, and put into freezer storage bag. When ready to eat, defrost and heat uncovered.
