Sweet Potato Quinoa Chili

I’ve been on a kick to try new lunch recipes that I can bring to work for lunch. I prefer pareve, but also wanted something filling and more on the healthy side (read: no pasta).

I’ve been experimenting and decided I should try to add quinoa into my diet. I really wanted to like quinoa (I’ve never been a huge fan) so I decided that if I mix it with sweet potatoes, which is one of my favorites, then the quinoa will taste better.

The result? I liked this! DH said it had an interesting taste, but I thought it was something different to add into my lunch rotation.

Sweet Potato Quinoa Chili

Materials

  • 1 large sweet potato cut into small chunks
  • 1 medium red onion diced
  • 1 red bell pepper diced
  • 1 can can black beans 15 oz
  • 2 cans fire roasted tomatoes with garlic 15 oz
  • 3-4 cups vegetable broth
  • 2 tablespoons tomato paste
  • 1/2 cup uncooked quinoa
  • 1 tablespoons chili powder
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon coriander
  • 1/2 teaspoon cayenne
  • Salt & pepper to taste

Instructions

  • Add all ingredients into slow cooker. 
  • Mix and cook on low for 6-8 hours until quinoa is cooked and sweet potatoes are tender.
