Easy Zucchini Kugel

easy zucchini kugelAlthough I love the zucchini kugel recipe I used to make, it was two steps. I had to boil the zucchini and then add all the other ingredients. It wasn’t hard, but annoying to make. It also didn’t freeze well.  Imagine a pan full of water.  Ewww.

The main reason I switched to this easy zucchini kugel recipe is because you don’t have to pre-boil the zucchini.  Just cut it, mix it, and bake it.  I don’t even peel the zucchini.

This kugel freezes really well, so I usually make a whole bunch at one time when zucchini goes on sale.  You can chop the zucchini yourself or slice it in the food processor.  Just make sure that your zucchini is in small pieces, not shredded.

Easy Zucchini Kugel

Materials

  • 6 medium zucchini quartered & sliced (I used my food processor)
  • 1 medium onion chopped
  • 1 cup flour
  • 1/2 teaspoon baking powder
  • 1-2 tablespoons onion soup mix
  • 4 eggs
  • 1/2 cup oil
  • salt & pepper

Instructions

  • Mix all ingredients
  • Bake, uncovered, in a greased 9x13 pan at 350 degrees for 1.5 hrs or until set & golden brown

  1. Do you ever grate the zucchini with your food processor? I’ve actually never seen a zucchini kugel with slices!

  2. The last time I made this kugel I sliced it with my food processor… it went much faster than slicing it myself! And I think it tasted better because the pieces were thinner.

  12. I know this is an old post, but I just wanted to thank you. Made this Thursday night for Shabbos and it was delicious! I only had half the zucchinis I needed, so I halved the recipe and made it in a smaller pan. Amazingly good, and our guests thought so, too. Thanks!
