This recipe works best in a big black roaster like this one:
It might sound silly, but if you use a regular tin or any other type of pan, it just won’t be the same.
I often prepare everything in the roaster the night before and cook it fresh.
- Chicken on the bone
- Red potatoes
- Sweet potatoes
- String beans
- Garlic powder
Peel potatoes and cut into big pieces, place in cold/warm water until step 3.
Wash string beans very well and cut off ends.
Line the potatoes on the bottom of the roaster and generously sprinkle with garlic powder and paprika. To get a nice color wet hands and rub potatoes until paprika and garlic powder are all over the potatoes.
Place string beans on top of potatoes and sprinkle with garlic powder and paprika.
Clean chicken (I remove the skin) and place on top of string beans. Generously sprinkle with garlic powder and paprika and rub all over chicken like in step 3.
Put some water in the bottom of the roaster to just cover the bottom, so potatoes don't burn.
Cover and cook in oven a 375° for 2 hours (the longer you cook it the softer everything will get!)
Check half-way through to make sure potatoes aren't burning. If needed add more water.
